Bacon Wrapped Meatloaf

Meatloaf is often boring but this recipe is destined to impress your guests visually and satisfy their tastebuds.


Ingredients

– 2 tbsp butter
– 1 yellow onion, chopped
– 25 oz. ground beef, lamb or pork
– ½ cup heavy whipping cream
– ½ cup shredded cheese
– 1 egg
– 1 tbsp dried oregano or dried basil
– 1 tsp salt
– ½ tsp ground black pepper
– 7 oz. sliced bacon
– 1¼ cups heavy whipping cream, for the gravy
– ½ tbsp tamari soy sauce (optional)


Instructions

  1. Heat the oven to 400°F (200°C).
  2. Fry the onion until soft but not browned.
  3. Mix the ground meat in a bowl. Add all other ingredients, except the bacon. Mix well, but avoid overworking it because this can make the end result too dense.
  4. Form into a loaf and place in a baking dish. Wrap the loaf in bacon.
  5. Bake in the middle of the oven for about 45 minutes. If the bacon begins to overcook before the meat is done, cover with aluminum foil and lower the heat a bit.
  6. Save the juices that have accumulated in the baking dish, and use to make the gravy. Mix the juices and the cream in a smaller sauce pan. (I use 1/2 cup of the juices with the cream but you can adjust as needed here) 
  7. Bring to a boil and lower the heat and let simmer for 10–15 minutes until it has the right consistency. If you want, use a little tamari soy sauce to taste.

Keto Ice Cream

Craving ice cream, so do we! So we found a better way to make it!



Ingredients
– 1 cup of whipping cream
– 2 tbsp swerve (sweetener)
– 1 tbsp cocoa powder – unsweetened (Optional)
– 1 tsp vanilla
– 2 tbsp sugar free chocolate chip (Optional)

Instructions
Shake all the ingredients for 5 minutes, then freeze.
We recommend using a mason jar or something similar.


Nutrition – Per serving: Fat 22g, Protein 1g, Carbs 3g. (1 serving = 1/2 cup)

Bloody Bear Cocktail

Our friend Taylor, from Bears Breath, has graciously offered us his recipe for a delicious and low carb Bloody Mary. Let us know what you think in the comment section!



Ingredients

  • (1) 5.5 oz can of tomato juice
  • 1 tbsp Bears Breath Ketchup
  • 1.5-2 oz Vodka
  • Lime slice, celery stick, bacon slice and skewered pickled onion for an edible garnish

    Chipotle Rimming Salt
    • 2 tbsp kosher salt
    • 1/4 tsp chipotle hot sauce
    • 1/2 tsp celery salt
    • Combine ingredients in a small bowl and whisk until well combined.

Instructions

  1. Rim pint glass with chipotle salt.
  2. Mix together tomato juice, ketchup, vodka – stirring well and then pour into pint glass.
  3. Add ice to fill glass and garnish with lime slice, celery, bacon and pickled onions.

Serves 1 (But you can easily double or triple the recipe for a party!)
